How to Watch an Instagram Story Anonymously
Short answer: Instagram has no anonymous mode. Every story you open from a logged-in account puts your username on the owner's viewer list within seconds, and there is no setting to turn that off. The only ways around it are to not be logged in at all, or to not be the one opening it.

The workarounds, ranked by whether they actually work
Airplane mode: works once, unreliably
Load the stories tray while connected, switch to airplane mode, then open the story from the cached tray. The view cannot be reported while you are offline.
The catch is that the view is usually queued, not cancelled. Reconnect with the app still running and it often syncs anyway. To have a real chance you have to force-quit the app before going back online, and even then the behaviour changes between app versions. It also only works for stories already cached in your tray, so you cannot use it to check an account on demand.
A second account: moves the problem, doesn't solve it
